The meat is a big part of our food culture. At CGs we mix the wonderful meat from our local farms with high class meat from other parts of the world. Depending on the seasons our meat selection will alter.
Degrees of doneness
Warm with a raw centre.
Warm with a semi-raw centre.
Semi-cooked at 45°C with a red centre.
Cooked at 55°C with a red centre.
Cooked at 65°C, a little red in the centre.
Cooked at 80°C, the meat is cooked right through at the centre.
PLEASE NOTE! MEAT THAT IS COOKED WELL DONE OFTEN LOSES ITS CHARACTER.
